Also note that as with any tea there are different quality levels of matcha, and while you’ll want to opt for high grade to optimize your drinking experience, you can go for lower grades, which are usually designated as baking or cooking matcha, to fulfill your culinary needs. To get ideas for incorporating matcha into some of our favorite snacks and sweets, we turned to the matcha experts at David’s Tea, MatchaBar and Palais des Thés.

Matcha Financiers from Palais des Thés (makes 4)
- 1 tablespoon cooking matcha
- 1/2 cup flour
- 1.2 cups powdered sugar
- 4 egg whites
- 2/3 cup melted butter
- 1 cup almond powder
In a large bowl, mix all ingredients together. Pour the mix into financier or mini muffin molds and bake for 8 minutes at 425 degrees Fahrenheit. Cool, remove from molds and serve with raspberries for a snack or dessert.
